Recipe for Mocha Cupcake

Another cupcake recipe to share with you, from cooking101.org... a simple Mocha Cupcake recipe:

Ingredients:

1 1/3 cups all-purpose flour
1/2 cup unsweetened cocoa powder
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon Kosher salt
1/4 teaspoon ground cinnamon
1 1/2 teaspoons coffee powder (or you could choose to use espresso powder)
1/2 cup hot water
1 teaspoon vanilla extract
1/2 cup whole milk, plain yogurt, or sour cream
1/4 pound (1 stick) unsalted butter, at room temperature
1 cup sugar
1 egg

Directions:

Preheat the oven to 375 degrees F. Then line 18 muffin cups with paper baking cups or you could use a cupcake pan.
Put the flour, cocoa powder, baking powder, baking soda, salt, and cinnamon in a large bowl and mix thoroughly.
Dissolve the coffee powder in a small bowl with water. Then add vanilla and milk. Stir until fully mixed.
Put the butter and sugar in a mixer bowl and beat until the mixture becomes light and fluffy. Then add the egg and beat well. Add half of the flour mixture and beat well. Next, add the coffee mixture and the remaining flour then mix well.
Fill each muffin cup with the batter mixture till 2/3 full. Bake for 20 minutes then set aside to cool.

I discovered a baking game in Facebook... a game so interesting for me that it's now became an addiction.. lols!
I just wished that this baking game is true... I know how to bake pastries, I have my own bakery and it's earning pretty much! Well, I just hope that it is all real... ;)

23. Have you ever been betrayed by someone that came as a complete surprise? Without revealing the person, if yes, tell us about it. Yes, of course, you're pouring your heart out to this friend, thinking that she'll keep it to herself. Then somebody told you that your friend was telling some secret about you, how disappointing! You get to trust her, then she's the first one who'll spread your secret...

24. Do you ever think that is a good idea to hide your feelings? Sometimes hiding your feelings help and most of the time, not.

25. Tell us about your favorite year when you were a student. The last year of high school and the last two years of college. I learned to be independent is some situations.

25. When was the last time you were in a very good mood? What caused it? Last Wednesday, it was our 3rd year wedding anniversary.

26. Have you ever had a romantic relationship with a sibling of a good friend? As for as I can remember... never had one.

27. Tell us about the last thing that you did that you truly regret. Actually, I don't want to regret anything that has happened in the past. Its past already and I made that decision, I made a choice... so I have to live with it. Life is too short just to regret on every thing you don't want happening to you.

28. When did you laughed today? Early this afternoon, because of my wacky daughter. ;)

29. Do you trust easily? For some reason... not that easily.

30. What do you care about that you wish more people would? Their relationship with our Creator.

31. Is it easier for you to go without food or go without sleep? I think, without sleep.

32. What non-alcohol beverage do you enjoy drinking the most? Milo, Iced tea and Coca Cola (does Coke has alcohol in its ingredients?)

33. When you walk into a room full of strangers, generally how is your confidence? Sometimes it differ from that day's mood. If I don't feel like myself, then the confidence is down, but if I am really in the mood, it goes up in the ceiling... lols!

34. Does talking about sex with anyone but your lover make you uncomfortable? YES!

35. Do you tend to believe members of the opposite sex mostly behave the same way? No.

36. Did you drink any alcohol this week? If yes, what? I refrain drinking alcohol because of my little daughter.

37. Would you ever consider being a vegetarian? Sometimes.

38. Do you believe that there’s always room in your heart for someone? Define "someone"... if the someone referring you're referring to is someone I would get romantically involved with, the answer is a NO.

39. Do you believe in the concept of soul mates? Yes.

Paper Cupcake Toppers

There are a lot of decorating tips we can learn in making cupcakes. These cupcake decorations makes the cupcakes more interesting to eat and especially to look at.

Cupcake Toppers are one of these, the non-edible cupcake toppers, and it is also very easy to make. You can make variety of toppers according to your occasion, there a lot of designs you can try... from simple to more complex design if you like. I am now sharing with you steps or instructions how to make a paper cupcake toppers:

Supplies Needed:

Scissors or Paper Punches
Cardstock
Photo paper or round label sheets
Glue, double-stick tape or pop-up glue dots
Lollipop stick, toothpick, Popsicle stick or wood skewer
Computer and printer

Paper Cupcake Topper Instructions:

Find an image or images you would like for your cupcake toppers. Print them out onto photo paper or cardstock. *You can also print your images onto round labels. If you use this method, you can skip the next step.
Punch out or cut out your images using scissors into whatever shape you would like. The most popular cupcake topper shapes are circles, scalloped, rectangle and square.
Select cardstock for your background and punch out or cut out that as well. *The background needs to be slightly larger than your image. So, if your image is 1", your background paper needs to be 1 1/2" or larger.
Attach a lollipop stick, toothpick, Popsicle stick or skewer using glue or foam dots to your cupcake topper. You can attach the stick to the back of the cardstock or in between the cardstock and image.
Optional: Embellish your paper cupcake toppers with ribbon, gems, die cuts shapes, cut outs, etc. Instead of two layers of matting, add 3 or more. The ideas are endless!

Looking all those arty cupcake toppers makes the cupcake more interesting!

Recipe for Vanilla Cupcake

I found this vanilla cupcake recipe at cookeatshare.com, its simple and easy to follow... here it is:

Ingredients

3/4 cup (1-1/2 stick) unsalted butter, room temperature
1-2/3 cups vanilla sugar
2 large eggs, room temperature
2-2/3 cups flour
1-1/2 teaspoons baking powder
1/4 teaspoon salt
3/4 cup + 2 tablespoons milk
1 teaspoon vanilla extract
1/2 vanilla bean, seeds scraped out

Directions

Beat butter until softened. Add sugar and beat until light and fluffy, about 3 minutes.
Add eggs, one at a time, beating until well combined.
Measure the flour, baking powder, and salt into a medium bowl and whisk to combine.
Measure out the milk and vanilla and stir to combine.
Add about a third of the dry ingredients to the butter/sugar and beat to combine. Add about a half of the milk/vanilla and beat to combine. Continue adding, alternating between dry and wet and finishing with the dry.
Scoop batter into cupcake cups about 2/3’s full. Bake at 350 degrees for about 22-25 minutes or until a cake tester comes out clean.

Disney Princess Cupcake - Ariel, The Little Mermaid

Recipe for Chocolate Cupcake

Here's a simple chocolate cupcake recipe for all cupcake lovers out there...
Have fun baking!

Ingredients

2 cups all purpose flour
2 cups sugar
1/2 teaspoon baking powder
1 teaspoon salt
1 teaspoon baking soda
1/2 cup shortening
3/4 cup water
2 large eggs
3/4 cup milk
1 teaspoon vanilla
4 ounces melted unsweetened baking chocolate

Directions

Preheat oven to 350 degrees. Line cupcake pans with paper liners.
Combine all ingredients into large mixing bowl. Mix at low speed for 30 seconds, and scrape bowl. Mix at high speed for 3 minutes.
Fill liners 1/2 to 2/3 full of batter. Bake 20 to 25 minutes or until toothpick inserted in center comes out clean.
Cool 10 minutes in pans then remove from pan, and place on wire racks to cool completely.
Frost when chocolate cupcakes are completely cool.

Cupcakes, also known as "fairy cakes", is a miniature copy of party cakes, with frosting, decorations and everything. Not unlike those party cakes, these cupcakes is only for one person serving.

The term "cupcake" was first mentioned in 1828 in Eliza Leslie's Receipts cookbook. In the early 19th century, there were two different uses for the name "cup cake" or "cupcake". In previous centuries, before muffin tins were widely available, the cakes were often baked in individual pottery cups, ramekins, or molds and took their name from the cups they were baked in. This is the use of the name that has persisted, and the name of "cupcake" is now given to any small cake that is about the size of a teacup. The name "fairy cake" is a fanciful description of its size, which would be appropriate for a party of diminutive fairies to share.

The other kind of "cup cake" referred to a cake whose ingredients were measured by volume, using a standard-sized cup, instead of being weighed. Recipes whose ingredients were measured using a standard-sized cup could also be baked in cups; however, they were more commonly baked in tins as layers or loaves. In later years, when the use of volume measurements was firmly established in home kitchens, these recipes became known as 1234 cakes or quarter cakes, so called because they are made up of four ingredients: one cup of butter, two cups of sugar, three cups of flour, and four eggs. They are plain yellow cakes, somewhat less rich and less expensive than pound cake, due to using about half as much butter and eggs compared to pound cake. The names of these two major classes of cakes were intended to signal the method to the baker; "cup cake" uses a volume measurement, and "pound cake" uses a weight measurement. - quoted from cupcake, wikipedia
