Rainbow Cupcakes
Who said rainbows can only be seen up in the sky?
You can also see them down here... in a baker's kitchen!
What do you think they're made up of? Hmmm... I don't supposed a leprechaun would jump out of it, huh?
I am just amazed how does this little cuppies can turn out to be anything... Maybe I'll never know, not until I've got a chance to make one, right?

Recipe for Mocha Cupcake
Another cupcake recipe to share with you, from cooking101.org... a simple Mocha Cupcake recipe:

Ingredients:
- 1 1/3 cups all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon Kosher salt
- 1/4 teaspoon ground cinnamon
- 1 1/2 teaspoons coffee powder (or you could choose to use espresso powder)
- 1/2 cup hot water
- 1 teaspoon vanilla extract
- 1/2 cup whole milk, plain yogurt, or sour cream
- 1/4 pound (1 stick) unsalted butter, at room temperature
- 1 cup sugar
- 1 egg
Directions:
- Preheat the oven to 375 degrees F. Then line 18 muffin cups with paper baking cups or you could use a cupcake pan.
- Put the flour, cocoa powder, baking powder, baking soda, salt, and cinnamon in a large bowl and mix thoroughly.
- Dissolve the coffee powder in a small bowl with water. Then add vanilla and milk. Stir until fully mixed.
- Put the butter and sugar in a mixer bowl and beat until the mixture becomes light and fluffy. Then add the egg and beat well. Add half of the flour mixture and beat well. Next, add the coffee mixture and the remaining flour then mix well.
- Fill each muffin cup with the batter mixture till 2/3 full. Bake for 20 minutes then set aside to cool.

Baking Life in Facebook
I discovered a baking game in Facebook... a game so interesting for me that it's now became an addiction.. lols!
I just wished that this baking game is true... I know how to bake pastries, I have my own bakery and it's earning pretty much! Well, I just hope that it is all real... ;)
And as part of my recent addiction and frustration, I'll be sharing here, since this is my cupcakes blog, the personalized cupcakes I made straight from my 'bakery's kitchen'! So, just hold on to your seats and see my online creations here... ;)

Paper Cupcake Toppers
There are a lot of decorating tips we can learn in making cupcakes. These cupcake decorations makes the cupcakes more interesting to eat and especially to look at.
Cupcake Toppers are one of these, the non-edible cupcake toppers, and it is also very easy to make. You can make variety of toppers according to your occasion, there a lot of designs you can try... from simple to more complex design if you like. I am now sharing with you steps or instructions how to make a paper cupcake toppers:

Cupcake Toppers are one of these, the non-edible cupcake toppers, and it is also very easy to make. You can make variety of toppers according to your occasion, there a lot of designs you can try... from simple to more complex design if you like. I am now sharing with you steps or instructions how to make a paper cupcake toppers:
Supplies Needed:
- Scissors or Paper Punches
- Cardstock
- Photo paper or round label sheets
- Glue, double-stick tape or pop-up glue dots
- Lollipop stick, toothpick, Popsicle stick or wood skewer
- Computer and printer
Paper Cupcake Topper Instructions:
- Find an image or images you would like for your cupcake toppers. Print them out onto photo paper or cardstock. *You can also print your images onto round labels. If you use this method, you can skip the next step.
- Punch out or cut out your images using scissors into whatever shape you would like. The most popular cupcake topper shapes are circles, scalloped, rectangle and square.
- Select cardstock for your background and punch out or cut out that as well. *The background needs to be slightly larger than your image. So, if your image is 1", your background paper needs to be 1 1/2" or larger.
- Attach a lollipop stick, toothpick, Popsicle stick or skewer using glue or foam dots to your cupcake topper. You can attach the stick to the back of the cardstock or in between the cardstock and image.
- Optional: Embellish your paper cupcake toppers with ribbon, gems, die cuts shapes, cut outs, etc. Instead of two layers of matting, add 3 or more. The ideas are endless!
