Here's a simple "Love You, Mom!" cupcake... sprinkle some white here, a little red heart there and a cute pink flower over there...

Recipe for Vanilla Cupcake
I found this vanilla cupcake recipe at cookeatshare.com, its simple and easy to follow... here it is:
Ingredients
- 3/4 cup (1-1/2 stick) unsalted butter, room temperature
- 1-2/3 cups vanilla sugar
- 2 large eggs, room temperature
- 2-2/3 cups flour
- 1-1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 3/4 cup + 2 tablespoons milk
- 1 teaspoon vanilla extract
- 1/2 vanilla bean, seeds scraped out
Directions
- Beat butter until softened. Add sugar and beat until light and fluffy, about 3 minutes.
- Add eggs, one at a time, beating until well combined.
- Measure the flour, baking powder, and salt into a medium bowl and whisk to combine.
- Measure out the milk and vanilla and stir to combine.
- Add about a third of the dry ingredients to the butter/sugar and beat to combine. Add about a half of the milk/vanilla and beat to combine. Continue adding, alternating between dry and wet and finishing with the dry.
- Scoop batter into cupcake cups about 2/3’s full. Bake at 350 degrees for about 22-25 minutes or until a cake tester comes out clean.

White Wedding Cupcakes
White stands for purity. White represents wedding, you can seldom see a different colors in wedding celebrations... well, maybe in some culture.
And of course, if your wedding motiff is all white, why not make your little cuppies white too?
Aren't they lovely? You haven't seen them all... I so adore these little square wedding cupcakes!
Can we just display and look at them and NOT eat them?

Disney Princess Cupcake - Ariel, The Little Mermaid
This cupcake entry is inspired by my little daughter a.k.a. 'little mermaid', she just love that disney princess character, even ariel's daughter, little melody!

Recipe for Chocolate Cupcake
Here's a simple chocolate cupcake recipe for all cupcake lovers out there...

- 2 cups all purpose flour
- 2 cups sugar
- 1/2 teaspoon baking powder
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1/2 cup shortening
- 3/4 cup water
- 2 large eggs
- 3/4 cup milk
- 1 teaspoon vanilla
- 4 ounces melted unsweetened baking chocolate
Directions
- Preheat oven to 350 degrees. Line cupcake pans with paper liners.
- Combine all ingredients into large mixing bowl. Mix at low speed for 30 seconds, and scrape bowl. Mix at high speed for 3 minutes.
- Fill liners 1/2 to 2/3 full of batter. Bake 20 to 25 minutes or until toothpick inserted in center comes out clean.
- Cool 10 minutes in pans then remove from pan, and place on wire racks to cool completely.
- Frost when chocolate cupcakes are completely cool.

Cupcakes - It's History
Cupcakes, also known as "fairy cakes", is a miniature copy of party cakes, with frosting, decorations and everything. Not unlike those party cakes, these cupcakes is only for one person serving.
The term "cupcake" was first mentioned in 1828 in Eliza Leslie's Receipts cookbook. In the early 19th century, there were two different uses for the name "cup cake" or "cupcake". In previous centuries, before muffin tins were widely available, the cakes were often baked in individual pottery cups, ramekins, or molds and took their name from the cups they were baked in. This is the use of the name that has persisted, and the name of "cupcake" is now given to any small cake that is about the size of a teacup. The name "fairy cake" is a fanciful description of its size, which would be appropriate for a party of diminutive fairies to share.
The other kind of "cup cake" referred to a cake whose ingredients were measured by volume, using a standard-sized cup, instead of being weighed. Recipes whose ingredients were measured using a standard-sized cup could also be baked in cups; however, they were more commonly baked in tins as layers or loaves. In later years, when the use of volume measurements was firmly established in home kitchens, these recipes became known as 1234 cakes or quarter cakes, so called because they are made up of four ingredients: one cup of butter, two cups of sugar, three cups of flour, and four eggs. They are plain yellow cakes, somewhat less rich and less expensive than pound cake, due to using about half as much butter and eggs compared to pound cake.
